Muffin alle zucchine con cuore di stracchino

INGREDIENTS

3 eggs
200 gr of solina flour type 0 + 2 tablespoons for flour
2 zucchini
70 gr grated parmesan
80 ml of sunflower oil
1 sachet of yeast for savory pies
150 grams of stracchino
salt to taste

PROCEDURE

Form 12 balls of stracchino about the size of a walnut, dip them in flour and put them in the freezer for 30 minutes.

In the meantime, mix the eggs, salt and oil together. Add the grated Parmesan, the flour and the baking powder. Grate the courgettes into fillets and add them to the batter.

Prepare 12 muffin cups, pour in a little dough, place a ball of stracchino cheese in the center and cover it with more dough.

Once ready, bake the muffins at 180 ° C and cook for 30 minutes.
